Dry-Aged Irish Ribeyes

 

Eder, the Brazilian butcher down at the friendly neighborhood Kinvara EuroSpar, is experimenting with aging Irish beef.

Eder is cutting the aged primals into these monster 3 pound Tomahawk Steaks–they sell for around 50 US dollars each. (44 Euros)

They come out absolutely delicious on the wood-fired Kamodo Joe smoker.
